Hi I'm Tiffany Haymore - I teach Spanish for the USG eCore Program. I grew up near Detroit, Michigan where a department store called Hudson’s was popular. They had a restaurant on the 2nd floor and my grandmother went to Hudson’s every Saturday for lunch. My mom and I occasionally accompanied her. My mom somehow obtained the super- secret recipe for their signature salad and started making it at home. It was one of our family’s favorites growing up! In 1983, we moved to Florida and since then I’ve married and had a family of my own. My grandmother passed away about 10 years ago and Hudson’s has gone out of business.

I know what you are thinking... "Salad doesn’t sound all that exciting". Right? But I can assure you, this is a delicious salad! In fact, it is now one of my own family’s absolute favorite meals! Over the years, I have added a few short-cuts from the recipe that my mom handed down (hence the salad cubes and pre-packaged chicken). It is now so easy that I actually had my children make it for this picture (it also doubled as dinner tonight!).

Salad Ingredients:
1
head of Romaine lettuce (cleaned and cut to desired size)
2
cups of diced chicken breast (cook at home or can be bought pre-packaged to save
time)
2 packages
of sliced ham (6 oz. each)--cut into thin strips or small pieces
1-2
packages of sliced Swiss cheese (depending how much you like Swiss)--cut into
thin strips or grate
1
Jar of Sweet Salad Cubes (16oz)—drained (**or dice a jar of Sweet Gherkins)
**optional—we
chop and add the cooked egg whites leftover from the dressing (see below)
**all
of these amounts can be added or subtracted at your desired amounts and preferences
Dressing Ingredients:
2
cups of Hellmans dressing
1/4
cup of coffee cream (Half and half)
1 tsp
Onion (I cheat by using Onion salt, but fresh is better)
2
Cooked/boiled egg yolks (grated)
**this is the most important part salt/pepper
to taste
Directions:
1.
Combine all of the salad ingredients
2.
Combine all of dressing ingredients and mix with a blender until smooth.
3.
Toss the dressing and the salad in a large bowl for presentation
(we keep the dressing and salad separate and
mix individually so that we can save the leftovers)
